Why vegetarian?

It’s simple… evidence shows that eating a more plant based diet while consuming limited amounts of lean meats can help you prevent some chronic diseases.   Yet, there is something terrifying about placing oneself in a a “diet box” that surly sets us up for rebellion and shame when we outside the boundaries we have set.   Diets don’t work.   Instead of becoming a title, a full blown “vegetarian”– choose to become a little more intentional in adding more vegetarian-ish meals into your week.   With these recipes, I hope you’ll enjoy eating a little more #almostveg!

I’m not ashamed to admit that I NEED some sort of chocolate everyday.   I have had to find ways to make it healthier — and usually need this at about 3pm when my energy is dropping and my cravings are poppin’.

Being a big fan of “no bake” cookies — I have made many iterations with this basic recipe for protein balls/bites.

This will be the second time I have completed the Advocare 10 day cleanse.  Last time– it helped kick my butt into eating cleaner, increased my energy and lost a lot of belly bloat (3.5 inches worth!).

Advocare has upped their cleanse game, now offering an unflavored Fiber drink… can I get an amen?!  That peaches stuff was hard to choke down.

The first BBQ of spring and I had no idea what to bring.  

I searched for a wheatberry apple feta salad recipe I once had but I could not find it anywhere.   I was also feeling pressed for time and had to use what I had at home — no grocery trip for me, but situations like this, always make for a fun recipe challenge.

I opened my fridge and made eye contact with this tasty bottle of red curry goodness– It reminded me of why I purchased it — so tasty… (to make one of my fav Blue Apron recipes : Thai Shrimp Soup with Red Curry, coconut & lemongrass)  

However,  I had not been to the grocery for the week (some serious Old Mother Hubbard cupboards stuff going on) and I was really craving the flavors of this red curry so I had to come up with a way to use this sauce so I didn’t have to go out in the cold cold weather to fetch ingredients.

The smells, the sites, the music, the food… it was all so delicious. A Foodies paradise!

Such a gorgeous day yesterday- we walked from a friends house in German Village to the 2014 Columbus Food Truck Festival – we thought walking could help offset all of the delicious calories we were about to consume. Upon entering we took a lap to see what caught our eye. — My friend found a delicious Shrimp Po’Boy while I hunted down my first “taste.”

Behold, my favorite summer time fiesta, Mexican- inspired salad!

I am the go-to salad girl when it comes to a family get together, BBQs and party’s —   I am not sure how it happened but I feel honored to not be the “ice bringer” or “buns-girl.”  

I believe this came from a self-nomination — I am the only pain in the ass almost vegetarian I know, so I wanted to selfishly bring something I knew I could eat to parties so that my friends and family did not have to cater to my animal aversion.

I have a  love-hate relationship with ice cream.  It’s so delicious and I only love the really rich flavors of course.   So …tons of un-needed fat and sugar sneaks its way into my diet.

Living in Columbus, Ohio (which seems to be the ice cream mecca of the world) we take way too many trips to Jeni’s.   Inspired by her artisan ice creams, I am experimenting in my kitchen, 1 pint at time.    One day I will have to buy her ice cream cookbooks… until then I will keep building my own!
